The 2007 Eikendal Chardonnay shows good structure and balance. This was given 7 months of newer French oak treatment which brought just the right amount of nuance without impinging on the fruits purity. Toasty oak adds a nice framing dimension to the ripe fruit without overpowering it. Natural acidity guarantees length and freshness that will allow the wine to evolve well for the next 4-5 years. Notes of lemon and citrus zest flavors are rounded out with some subtle vanilla and toast notes as well as a mineral character alongside the acidity on the finish, giving additional complexity to the wine. Rich but endowed with lifted fruit flavors and good structural acidity this has the diversity to work with a lot of different food options.
