The wine displays Cabernet Sauvignon cassis and blackcurrant fruit on the nose as well as having a fresh minty, herbaceousness backed by mocha vanilla. Firm structured tannins and a long finish on the palate show great ageing potential.

Like sibling, 2 years in new oak, suitable foil for opulence. 21 ***** (96 pts) show’s vintage’s expressive restraint. Lovely intensity & complexity, similar profile but finer tannins & structure for the long haul, while debonair sibling entertains.

The 2020 David Finlayson GS Cabernet Sauvignon strikes the right balance of volatility, enhancing the wine’s ripe fruit character that consistently melds with oak and kernel nuances. It reveals sophisticated notes of graphite. Medium to full-bodied, the wine is firm and tannic on the palate, suggesting this Cab will benefit from another year or two in the bottle to find its stride fully, and it has a mineral-laced finish. Decanting is recommended to unlock its full potential. This vintage matured for 24 months in 100% new French oak barrels. A total of 9,000 bottles were produced. 2025-2038

Aromas of blackcurrants and black cherries, chocolate, licorice and graphite. Full-bodied with chewy tannins. It has a creamy texture and a deep core of ripe black fruit. Rich and lingering.

GS is a flagship offering from David Finlayson, named after the legendary 1960s’ winemaker George Spies. Serious, dense and age-worthy, it’s a concentrated Cabernet Sauvignon that was entirely aged in new French oak. The tannins are grippy and firm, the wood perfumed and stylish, the palate rich, full-flavoured and dark-fruited. 2023-27

Winemaker Notes

The vintage was a return to more average growing temperatures after plentiful rain in the winter season. The vines benefitted from the conditions and returned grapes that showed good balance of tannin and fruit flavours whilst maintaining fresh acidity. Definitely a vintage of note and worth cellaring. Ideal for classic dining situations.

All grapes were hand picked, sorted, destemmed and fermented in small 3000l Stainless Steel Tanks. Inoculated with Cabernet Sauvignon specific yeasts. Remontage consisted of two pump-overs /day. Macerated on skins for 21 days before soft pressing in pneumatic press. Free run wine kept for the GS bottling. Press wine separated. After maturation for 18 months, the wine was fined with Vegecol and bottled
