Made with the help of Master of Wine Richard Kershaw, this is a serious, well-structured Sauvignon Blanc that outperforms many of its peers. Blackcurrant leaf and elderflower flavours provide lots of crunch and focus, with some added structure from partial skin contact before fermentation. 2022-25

Similar unwooded tropical tones (gooseberry & passionfruit) in 21 (90 pts), from clay/shale soils. Some extra breadth from naturally fermented, lees-enriched portion. Succulent & flavoursome, with fine citrus seam.
The grapes are chilled to 3ºC. The bunches are sorted on a conveyor, destemmed and crushed. All transfers of grape must and juice in these early stages are attained using gravity. Selected parcels of the grapes undergo a period of skin contact, at 8ºC to encapture favourable skin flavours. After a gentle pressing, the juice is left to settle for a period of 72 hours at 2ºC. Fermentation in stainless steel tanks continues at 12ºC until the wine is dry.
