Harvested on the 27th of March, 2020 on a chilly, cloudy day at 23.6 degrees balling. Grapes were de-stemmed (not crushed) and moved to closed, stainless steel fermenter and inoculated with a Bordeaux style yeast. Pumpovers for soft, silky extraction took place twice per day for 10 days. At this point, free run wine at 2 balling was put in barrel to finish alcoholic and malolactic fermentatio
