The grapes for this wine were hand picked, hand sorted and whole bunch pressed then fermented in large French oak barrels and a solitary concrete egg using only natural wild yeasts. The aromatics are beautifully pure and high toned with spicy notes of fresh lemon grass, pithy white citrus peel, capsicum and hints of crushed gooseberries. Any oak notes are incredibly delicate and seamlessly integrated highlighting the extreme precision with which this classy Sauvignon Blanc was assembled. The palate is fabulously cool, crystalline and pure laced with crunchy green fruits, subtle green herbs, yellow grapefruit, hints of bell pepper spice and finishes with a stony, flinty, wet river pebble length. Compact, vibrantly cool climate with crunchy acids and wonderfully balanced, this is another class act from Jeremy Borg. Drink now until 2025+.

Just off dry, with cut grass and mangetout aromas, this cool climate cuvée of Sauvignon Blanc with 12% Semillon sees a combination of older barrels and a concrete egg and shows subtle vanilla, lime and lemongrass flavours. 2021-23

Bucking the reductive trend, exceptional 20 (93 pts) vinified as ‘traditional dry white Bordeaux to reflect gravel-like soil’ of Stanford vineyard. Spice from old-oak ferment /6 months ageing, subtle white-asparagus & wild yeast aromas, smooth & controlled salty palate. 12% semillon adds lemon nuance, informs seemingly endless finish.

Every now and again we hear of a parcel of grapes with an interesting story or discover a vineyard that gets our creative juices flowing. This range of wines comprises small volume, premium wines from exclusive and sustainably-farmed vineyards.
Lighting was the Kruger National Park’s most famous painted wolf. The alpha male of the Skukuza Pack, with his signature lightning flash on his left side he was easily identifiable and beloved by researchers as the quintessential African wild dog.
The Sauvignon Blanc grapes came from the beautiful Vaalvlei vineyard in Stanford, which is close to the ocean and has decomposed granite soil. The Semillon is from Robert Stanford vineyard.
This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of citrus, straw and
minerality, herbal notes and a hint of creamy vanilla.
This wine will continue to develop over the next 3-4 years
