The 2019 Cabernet Franc Zaha was made with grapes from the Toko vineyard in Paraje Altamire, Uco Valley where it was aged for 12 months in 40% new French barrels. Reddish purple in color. The nose presents notes of blackcurrant and cherry with gentle herbal aromas that enhance the fruit before fading into cedar. Compact in the mouth with heightened freshness, it ends with juice and texture. Attractive and full of flavor, this is a Franc to please every palate.
Zaha means “Heart” in Mendoza’s native Huarpe language. With deep, sprawling roots, the vines in the Toko vineyard literally extract the “Blood of the Earth” from deep within the rocky limestone sub soil.
The soils of Altamira are strewn with limestone soil patches, complete with white surface stones. This is where we have planted our Cabernet Franc. With different harvest times, each date produces a distinct profile of aromas, flavors and textures to add to the final blend: floral and herbal notes in the early harvest; dark, ripe red fruits and supple textures in the middle dates, and finely grained, well-structured tannins in the later harvests.
The harvest is micro-vinifed in small 500kg plastic harvest bins. We use only natural yeasts. ere are between 10-20% whole clusters in the ferment depending on the lot. Fermentation is slow and gradual, using only manual punching down as the cap management technique. Fermentation temperatures are kept low to preserve the delicate aromatic profile of the vineyard.
Bright and fresh mouthfeel, with red currant fruit flavors, pink pepper notes, and stony minerality. The finish is shows clean, crisp acidity and soft tannins. The different harvest dates result in different complex and aromatic profiles that integrate each other, enhancing the quality of this wine and reflecting its unique terroir.
